Cultivation of mycelial fungi for the development of food products.

In collaboration with Planetary SA, the general goal of this project was to study the cultivation of mycelial fungi including Fusarium venenatum, Aspergillus niger, Aspergillus oryzae and others. The upstream process consisted of converting the knowledge developed on batch cultivation to develop an efficient feeding regime which enables repeated fed-batch and continuous operation. The aim was also to define conditions for the production of biomass (mycoprotein) with distinct critical product attributes such as mycelia chain length, colour, texture and taste such that the biomass can be used to create a range of food products.
